CNY Edition: How to Make a Rat YuSheng
If you don’t already know, this Chinese New Year, would be the year of the Rat. We usually have yusheng so many times, you can’t count the number of times with one hand. It has become so customary that some do not know what yusheng symbolizes, and why we do it at almost every house we visit before the feast. Yusheng symbolizes bringing the family together, wishing for good luck, and health for the coming year. It is traditionally eaten on the 7th day of Chinese New Year, Ren Ri, but now, we have it uncountable times through the new year!
So to make your Yusheng more interesting, to welcome the Year of the Rat, here’s how you can make a Rat Yusheng!
Step 1

First, lay out the “grass”, we have used cucumber for this.
Step 2

Form the 3D shape of your rats. We have used Carrots and Radish for this. Hint: Might be easier to use radish for the body because it is easier to mould.
Step 3

We created a little heart with the tail, kinda gross but okay its cute. We were trying to be creative.
Step 4

Add details to your rat. We sliced the lime into thin slices, and then cut each slice into half, for the ears. As for the eyes, might have been better if we had black sesame seeds, but lime seeds were all we had so… Improvise.
Step 5

Add the remaining ingredients around the rats or however you like. Call your friends and family and dig in!
