Stuffed. Fully Stuffed. Baked. Potato. This is it. A stuffed baked potato is the child of a baked potato and a mashed potato, the perfect in between. This recipe is super simple, idiot-proof and absolutely delicious. Giving the cosy vibe, this is a go-to food for late night movies.
Here are all the ingredients you need:
Russet Potato
Bacon bits
Cheddar Cheese
Spring Onion
Butter
Milk
Optional:
Sour Cream

Step 1: Stab your potato with a fork so that it does not explode in the oven
Step 2: Coat with olive oil and season with salt
Step 3: Bake for 30 mins at 230°C
Step 4: Slice the baked potato into half and scrape out its insides into a bowl. Save the skin
Step 5: Add milk and butter into the potato and mix well
Step 6: Add bacon and cheddar and mix
Step 7: Fill the potato skin with the bacon-cheddar-potato
Step 8: Top with spring onion and more cheddar
Step 9: Bake for another 25 mins at 150°C and voila.
