D'Fine Catering Review - CNY Buffet Catering Special!

With Chinese New Year approaching quickly, many caterers are busy preparing for the festive season! Despite their packed schedule, D’Fine Catering still sent us their CNY full buffet to have a taste! We received their Lunar New Year Special Buffet 1, with full set-up included. It was comforting that the buffet arrived timely, and set-up was speedy. We were all ready to fill our growling tummies!

We received an additional item from them which was the Imperial Herbal Chicken Divine! Our entire buffet catering menu consists of:

Imperial Abalone Lo Hei Platter

I really loved the abalone slices in this Yusheng! They were chewy and savoury, perfectly complimenting every bite of Yusheng. The crackers were slightly different from your usual Yusheng, they were thinner, crisper and had a slightly charred aftertaste. I found them very addictive! What I really appreciate about the Yusheng was that the sauce wasn’t too sweet, so you can still taste the natural sweetness from the abalone itself!
100 Flower Blossoms with Yam Bit

As the name suggests, this dish was really vibrant! The broccoli was cooked just right, slightly soft but still retained its crunch. The yam bits were really delicious too! They are actually small balls of chewy yam doughs. When cooked with these vegetables and its sauce, the yam bits have fully absorbed the sauce and releases great flavour when you bite into them. Overall a really healthy yet delicious dish.
Thai Brilliant Mango Fish Fillet

One of my favourite dishes on this menu! The flaky fish is loaded with flavour when paired with the slightly sweet and sour sauce! The sliced up mango and red pepper slices definitely makes the dish look a lot more appetizing. The first thing you will notice is how tender the fish is. Be gentle with the fish or it might just fall apart when you try to pick it up. It’s a perfect balance between sweet, sour and savoury!
Har Lok Prawn

This is another beautiful dish! The tomato-based sauce enhances the natural sweetness of the prawns, making the prawns very tasty! Also, the prawns were big, fresh and succulent, which is everything you would want. I loved that they sliced open the back of the prawn shell, which not only makes it easier to deshell the prawn but allows the saucy goodness to coat the entire prawn, giving it more flavour. Definitely thumbs up for this dish!
Luxurious Yam Ring with Seafood

On first look, it seemed like quite a bland dish. But I was totally wrong after I took a bite of the yam ring. The texture was amazing, sort of like a pastry, and it was really well seasoned! The yam taste wasn’t overpowering, and when paired with the seafood, it comes together as a flavourful and wholesome bite.
Baked Honey Sesame Drumlets

Who doesn’t love chicken drumlets? You could really taste the honey used in these drumlets along with a distinct sesame taste. If you are able to handle some spice, I would strongly suggest that you dunk the entire drumlet in their sambal chilli sauce. The result? An absolutely savoury and sweet drumlet with a good kick!
Pan-Fried Seafood Gyoza

I feel that the gyoza wrap was done very well. The gyoza wrap wrapping the fillings was thin as if it came out from a Japanese restaurant! Slightly crisp on the bottom but still soft on top, this makes for a contrast in texture, which made eating these wraps really satisfying. The fillings was a combination of seafoods like squid, fish paste and more. It was a mini seafood party in my mouth when I took a bite of these. I also personally prefer having these wraps with the complimentary ginger and vinegar. For those who are not really into the sour taste of vinegar, eating the gyozas on their own is great too as they are flavourful enough!
Wok- Fried Rice w/ Smoked Duck & Cashew Nuts

We all knew that the fried rice would be good because you could smell a slightly charred aroma from the rice. Furthermore, the small pieces of smoked duck added more flavour and gave the fried rice a hint of smokiness! Their fried rice was quite nicely done and wasn’t clumpy at all!
Mixed Fruit Cocktail with Sea Coconut

The assorted fruits and sea coconut was served in a light syrup! A sweet and refreshing way to end any meal. It was good that the dessert was loaded with ice as it kept the dessert icy and cool throughout the buffet duration.
Imperial Herbal Chicken Divine (Add-on)

This dish was an add-on provided to us from D’Fine catering! This was a really well-liked by us! With all the Chinese herbs incorporated into this dish, you could really taste the herbs used. I reckon this dish was slow-cooked for a period of time as the chicken pieces was tender and the meat had already absorbed all the sauce! Yummy!
This buffet spread from D'Fine Catering was overall a delightful experience for us. The beautiful set-up alongside the mouth-watering food definitely fits the definition of a luxurious buffet.
