FoodLine Kitchen: Brown Sugar Pearls

FoodLine Kitchen: Brown Sugar Pearls

BREAKING NEWS… In light of the recent Covid-19 measures, bubble tea shops are no longer an essential service, but it still remains an essential in the lives of many Singaporeans. The main ingredient, of bubble tea, is of course, the bubble. Okay if you drink without the pearls then I don’t know what you are doing but I shall not judge. Do not worry, you can make pearls at home! It all comes down to one thing though… how badly do you want these? For the first time, you pay attention to every single pearl.

Check out our video on youtube: https://www.youtube.com/watch?v=-ei1LMaA-fg&feature=youtu.be

Here’s how to DIY your own cup of bubble tea. You can kill time and enjoy your bubble tea!

The ingredients you need for pearls are:

  1. Tapioca flour (150ml) + a little excess
  2. Brown Sugar (80ml)
  3. Water (90ml)

First, combine the brown sugar and water, and bring to a boil.

*IMPT: Only add half of the tapioca flour when the brown sugar is boiling.

Turn off the heat once you add the first half of tapioca flour and stir to combine. Then, add the remaining tapioca flour and continue stirring.

Pour it out while its still hot, and start kneading. Cover your hands with some tapioca flour so that you can knead the dough easily.

After that, roll the dough out to thin rolls and then cut them at about 1cm lengths. Roll into a ball so that it starts looking more pearl-y.

Roll the pearls in the excess tapioca flour so that they won’t stick.

Bring a pot of water to a boil, and throw the pearls in. Stir, so that they will not stick to the pot. Let it cook for 15 to 20 minutes.

If you are not a fan of brown sugar milk tea. Then you are done. Soak the pearls in ice water for about 5 minutes before serving.

If you are craving for brown sugar bubble milk tea, bring the brown sugar and water to a boil again, and throw in your pearls.

Let it cook until the brown sugar water becomes thick and gooey. Pour it into your glass and add fresh milk! Ta-da!
