Truffles are actually edible fungi, like mushrooms. But unlike mushrooms, they grow near tree roots and are found underneath in the dirt. The best truffles are extremely expensive which can be up to thousands of dollars per pound.

Truffles are expensive because it is very hard to grow them. They only like very specific kinds of soil and trees. They live inside tree roots so you cannot just plant truffle seeds in a field or something. Therefore, most of the truffles you get are mostly from the wild forest.

 

Black Truffle VS White Truffle

The main difference between black truffle and white truffle is that they grow in different countries. Black truffles are mostly being harvested in France while white truffles are picked in Italy. White truffle season is during September to December, hitting its peak in October and November. The season for black winter truffles is later, from December to February.

White truffles are more expensive compared to black truffles. White truffles are more fragrant and flavourful. Commonly being shaved raw on top of dishes. On the other hand, black truffles might require some light cooking to enhance its own aroma. Some dishes that use truffles are Pasta, Pizza, Risotto and the most commonly seen, Truffle Fries.
